The Bierwerk Story

Bierwerk Züri is a small brewery founded in Zürich in 2021, run by three brewers with experience at Beavertown Brewery in London and a brewing degree from Weihenstephan. The beer is brewed from water, brewing malt, wheat malt, aroma hops and yeast – without pasteurisation and without filtration, with long fermentation and maturation times of six to eight weeks. The water is softened before use; the production brewery brews with 100% renewable energy. At Gustav-Gull-Platz on Europaallee, Bierwerk has operated the Tankbierbar since 2021, a brewpub where the beer is brewed on site and tapped directly from 550-l serving tanks – accompanied by homemade sourdough focaccia. Since 2023, the brewery has been producing in the Werkstadt Zürich (former SBB workshops) at Hohlstrasse 418, filling into aluminium cans (0.44 l) and kegs (20 l/10 l); around 5,000 hl of beer per year is envisaged. Distribution takes place via counter sales at the brewery, online shop, tap system rental and the hospitality trade.
