About Braumanufaktur Schlachthuus

Since 2015, Braumanufaktur Schlachthuus GmbH has been brewing beer by hand in the former slaughterhouse in Lufingen in the canton of Zurich. The range comprises top-fermented, unfiltered and unpasteurised ales as well as specialty beers that undergo a traditional bottle fermentation after filling. Production is carried out exclusively in batches by hand, with the individual batches deliberately differing from one another. The heart of the microbrewery is a 1,000-litre brewhouse combined with three jacket-cooled 2,500-litre stainless steel fermentation tanks; filling is carried out on a semi-automatic bottle filling line including a labelling station with a capacity of up to 2,000 bottles per hour. Carefully selected raw materials are used, such as malt, hops (including Amarillo, Harlequin), maize, rock candy sugar and various yeast strains. The beers are sold via on-site counter sales, an online shop with postal delivery, the beverage retail trade as well as the gastronomy sector in the Zürcher Unterland region. In addition, the company offers brewery tours, beer tastings, draft beer for events, tap system rental and custom labels.
