About CHOCOTECH

CHOCOTECH GmbH in Wernigerode has been developing and manufacturing machinery and systems for the confectionery industry since 1920. The portfolio includes systems for weighing, dissolving, cooking, vacuumizing, caramelizing, crystallizing, aerating, cooling, dosing, forming and tempering sugar masses – including laboratory systems of the PRINCESS® series for test production and small batches. The systems are manufactured at the Dornbergsweg 32 site, where a new machining center was commissioned in 2020; machine components are made predominantly of stainless steel in hygienic design. Customers are manufacturers of hard candies, chews, jellies, caramel, fondant, foam masses, chocolate as well as halva and laminated products. As a system partner, CHOCOTECH offers turn-key solutions from product validation through plant engineering to installation, commissioning and maintenance. The company belongs to the SOLLICH Group and is represented worldwide.

Technologies and Materials

Zucker

Sugar (sucrose)

Main raw material for hard candies, caramel, fondant and laminated products in the cooking and weighing systems.

Glukose

Glucose

Processed in weighing and dissolving systems such as ECOGRAV®, whose moisture is used to dissolve the sugar.

Isomalt

Isomalt

Sugar substitute for sugar-free masses, processable in the pressure-dissolving and cooking systems.

Stärke

Amylose-rich starch

Pressure-dissolved in the jet cooker with direct steam injection (DSI) for jelly products.

Sesam

Sesame paste

Fat base for halva, mixed and laminated with cooked sugar in the LAMINATOR.

Edelstahl

Stainless steel

Material for mechanical engineering, the tempering belt and pipe frames in hygienic design.
