About Dittmeyer´s Austern-Compagnie
Since 1986, Dittmeyer´s Austern-Compagnie GmbH has operated the only oyster farm in the North Sea in the Blidselbucht off List on Sylt, thereby continuing the tradition of North German oyster fishing. The Sylter Royal is raised on table cultures: the animals are placed in mesh bags (poches) that are flushed by nutrient-rich North Sea water at high tide. The poches, weighing around 15 kg, are turned, shaken and cleared of seaweed and algae growth by hand; at favourable tides up to four hours of work in the Wadden Sea are available. In addition to farming, wild oysters are collected by hand, seasonally, on designated sandbanks. At the facility on Hafenstraße, the oysters are conditioned in seawater tanks, packed and shipped by express delivery. The company also includes a restaurant with an oyster bar (new building 2020), guided tours of production and the Wadden Sea, and private events. Product safety is subject to the company's own quality control and to inspection by the Veterinary Office of North Frisia (Vet. approval no. DE-SH-EMV 003).
