Matjes and delicacy manufactory from Emden
Fokken & Müller is a matjes and delicacy manufactory based in Emden (East Frisia). Founded in 1895, the company produces Emden matjes and fish delicacy products based on North Sea herring from summer catches off the coast of Norway. The raw material is delivered freshly frozen and vacuum-packed, thawed in a specially built facility and traditionally skinned by hand to preserve the silver sheen of the fillet. Further processing includes filleting as well as salting and ripening in brine according to the traditional method. The product range includes matjes in various forms as well as other fish delicacy specialties. With more than 50 employees, the company combines traditional production standards – based on the historic Emden Herring Ordinance of 1597 – with modern production and storage conditions.
