About Fromages Spielhofer
Fromages Spielhofer is an artisanal cheesemaking business in Sonvilier in the Bernese Jura. The family business is run in its second generation by Cédric and Florian Spielhofer and processes over 50'000 litres of silage-free raw milk from the region every day – seven days a week – into around 20 cheese varieties as well as butter. The company is best known as the producer of Tête de Moine AOP, and also makes specialities such as L'Horloger, Mont Soleil, Montagne du Jura and Chaux-d'Abel. The milk comes exclusively from around 70 farmers in the region, whose total of roughly 1200 cows must graze on pasture for at least 120 days per year; the feed must be 100% regional. In addition to production, Spielhofer operates as a trading business and exports to over 65 countries; around 80% of the Têtes de Moine produced go abroad. The production of Gruyère AOP in Sonvilier is CO2-neutral thanks to the use of renewable energies and emission reduction. The company is certified to the ISO standards FSSC and IFS and operates fine-food shops in Biel/Bienne and Kerzers.
