About Hedwigsburger Okermühle
Hedwigsburger Okermühle GmbH is a long-established industrial mill located in Hedwigsburg (Kissenbrück) on the Oker river in the Wolfenbüttel district. The company specialises in producing high-quality wheat flours for the food industry, including type flours (Type 550, 812), soft wheat semolina (dunst), wafer flour as well as speciality products such as wheat swelling flour, BMT flour and heat-stabilised wheat germ and wheat bran. In addition to food products, technologically modified non-food wheat flours are manufactured, which are used, among other things, as binders in the production of wood pellets. The wheat comes predominantly from contract cultivation with regional farmers and is traceable back to the field. Tens of thousands of tonnes of wheat are processed annually; filling takes place in silo tankers, big bags and paper sacks. Quality and food safety are ensured by an in-house laboratory, regular inspections and a certified management system (including FSSC 22000, QS, ISO 50001). The company has belonged to v. Nordeck Holding GmbH & Co. KG in Bielefeld since 1999.

Delivery
Raw materials and processes
Wheat flour Type 550
Strong-gluten flour with high protein content for yeast-leavened baked goods with high baking volume.
Wheat flour Type 812
Weak-gluten flour for long-life baked goods and fine pastries.
Soft wheat semolina (dunst)
Product with particular granulation and purity for pasta, fine sauces and puff pastry.
Wafer flour
Flour with low gluten contents and good flow properties for wafer sheets of uniform structure.
Wheat swelling flour / milk substitute
Thermally and physically modified flour with high cold viscosity for the food and feed industry.
BMT flour
Specially modified flour with good flow and gelatinisation properties for soup and sauce applications.
Stabilised wheat germ and wheat bran
Heat-stabilised by-products for convenience foods, muesli bars and animal feeding.
Non-food wheat flour
Speciality flour with starch matrix for high abrasion resistance and long service life of press dies in wood pellet production.
