Marzipan out of love since 1806

J. G. Niederegger GmbH & Co. KG is a marzipan manufactory founded in 1806 by master confectioner Johann Georg Niederegger and headquartered in Lübeck. Now in its eighth generation as a family business, the company produces marzipan, nougat and pralines according to traditional recipes; more than 300 different products are made in Lübeck. The raw mass is made from almonds of select quality, sugar and rose water: the almonds are blanched, sorted by machine and by hand, washed and ground with sugar in roller mills. The traditional roasting process takes place in rotating roasting kettles over an open flame; the raw mass may contain at most 35% sugar, and no additional sugar is added during further processing. Every almond delivery is tested by an independent laboratory before production. In addition to the marzipan plant on Zeißstraße, the company includes the headquarters on Breite Straße with its café and marzipan salon as well as the factory outlet. The products are sold through retail, an online shop and international exports, including to New York, Paris and Tokyo.
