About Koch Cheese

Koch Cheese AG, based in Gonten/Appenzell, is a Swiss family business specialising in cheese refinement. Under the Tailor-Made Cheese brand, the team around affineur and cheese sommelier Kevin Koch develops and refines handmade cheese creations from the finest Swiss milk, partly in organic quality. The range extends from semi-hard and hard cheeses refined with flowers, herbs, spices or truffle essence, to cave-aged specialities from the company's own rock cellar made of sandstone, to ready-made fondue blends and raclette cheeses. The wheels are turned, salted, brushed and inspected by hand. The company supplies the retail trade with conventional and organic cheese, maintaining short transport routes and sustainable production. The tradition goes back to the vision of the parents Praxedis and Alois Koch in the Appenzellerland and has been carried on for more than 50 years.
