About Appenzeller Käse GmbH

Sortenorganisation Appenzeller Käse GmbH, based in Appenzell (CH), is the trade association behind the collective brand «Appenzeller Switzerland». It purchases the raw milk semi-hard cheese produced by around 37 village dairies in the cantons of St. Gallen, Thurgau and Appenzell Ausserrhoden and markets it in Switzerland and abroad; approximately 53 percent of production goes to export, of which around 78 percent goes to Germany. The organisation is responsible for quality control, marketing and advertising, as well as setting production volumes and sales prices. The cheese is produced as a raw milk cheese from non-thermally treated cow's milk and, during a maturation period of four to seven months, is treated with the legally protected herb brine. The portfolio includes the Classic (Silver Label), Gold Label, Black Label and Purple Label brands. B2B trade and affinage are handled by the five merchants of the Appenzeller Cheese Merchants' Association (AKHV).
