About Teekellerei Combuchont
Teekellerei Combuchont GmbH is a specialty fermentation cellar based in Pechgraben in the Upper Austrian municipality of Großraming. The company develops and produces cold-filled tea beverages under the Combuchont brand, marketed as the first cold-filled tea with wine-like shelf life. The basis is selected tea varieties from all over the world, combined with water from the Austrian Northern Limestone Alps and spontaneously fermented; a yeast culture bred by the founder ensures the long shelf life. The products mature for at least 18 months in historic mining cellars in which mining was once carried out. In addition to beverage production, the company conducts research on growing Camellia sinensis in the Alps, particularly on north-facing slopes and structurally disadvantaged valleys, in order to create agricultural added value there and counteract erosion. The Combuchont was originally created in the kitchen of the RAU restaurant in Upper Austria and is aimed at the gastronomy and beverage trade.
