About the WIB and the Promotional Association
The Weihenstephan Institute of Brewing Research (WIB) is a research institute of the Weihenstephan Promotional Association for Brewing, Beverage and Cereal Technology e.V. (WFBGG), located at Weihenstephaner Steig 20 in Freising. The non-profit association promotes science and research in brewing, beverage and cereal technology and, in addition to the WIB, operates its sister institute, the Weihenstephan Institute of Cereal Research (WIG). The core task of the WIB is the initiation, execution and coordination of research projects and interdisciplinary research consortia focusing on raw materials, brewing and beverage technology, including the research groups BioPAT and Digitalization, Beverage and Cereal Biotechnology, Smart Production Systems and Process- and Raw Material-Based Brewing Technology. Its portfolio includes the technical unit research brewery as well as analytics, consulting and services, such as AF4 analytics (Asymmetric Flow Field-Flow Fractionation) for the characterization of proteins, polyphenol complexes and polysaccharides in beverages. The association also serves as a point of contact for the brewing industry and related sectors, strengthens Weihenstephan as a training location and organizes events such as the Bottled Cellar Seminar and the Technological Seminar Weihenstephan. The association's office is located in Freising (Bavaria).

Analytics and Research Methods
Asymmetric Flow Field-Flow Fractionation
Gentle, size-based separation method for the characterization of proteins, polyphenol complexes and polysaccharides in beverages and foods in their native state.
AF4-MALS detector coupling
Determination of absolute molar masses and concentrations without reference substances, among other things for investigating the filterability of beer.
Gas chromatography / GC-O
Analysis of aroma compounds, in particular identification of characteristic aroma compounds in brewing and beverage matrices.
3D Printing in Research
Simulation and 3D-printed feed spacer networks for spiral-wound membrane modules for the filtration of milk protein concentrates.
Process Simulation
Model-based support for process development, control and monitoring, e.g. mashing process simulation and membrane module optimization.

Research Quality
The research projects are accompanied by the research committees of the WFBGG and publicly funded (including FEI, IGF, AiF, IVLV); the results are published in trade journals. Laboratory seminars and analytical services such as AF4 analytics complement the quality assurance of the research.
