We understand our craft
WILHELMI's Brotkorb GmbH is a craft bakery based in Schifferstadt that opened on 6 January 1972 and is now run by the second generation. With around 220 to 250 employees, the company operates 23 branches and 4 markets; production takes place exclusively at the headquarters in Schifferstadt. In its own bakery, breads and various baked goods are freshly baked several times a day. The centerpiece is a wood-fired oven, heated with untreated wood to around 500 °C; the breads, baked at about 270 to 280 °C, benefit from the slowly declining heat, gaining good crust properties as well as distinctive roasting and flavor compounds. Ingredients such as flour, water, salt and yeast are used; cakes, Danish pastries and doughnuts contain natural spices, jams, puddings, creams and genuine couverture. The company further develops traditional recipes and attaches importance to careful handling of resources such as flour, water and energy.
